Banana Blueberry Breakfast Cookies

These healthy and delicious Banana Blueberry Breakfast Cookies are perfect for a quick morning meal or a nutritious snack. They are naturally sweetened with ripe bananas and packed with juicy blueberries, oats, and nuts for a satisfying bite. No refined sugar, no dairy, and completely gluten-free!

Ingredients

  • 2 ripe bananas, mashed
  • 1 ½ cups rolled oats
  • ½ cup fresh blueberries
  • ¼ cup chopped nuts (walnuts or almonds)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mash the bananas in a large mixing bowl until smooth.
  • Add oats, nuts, honey, vanilla, cinnamon, baking powder, and salt to the bowl. Mix well.
  • Gently fold in the blueberries, being careful not to mash them.
  • Scoop tablespoons of the dough onto the baking sheet and flatten slightly with a spoon.
  • Bake for 12-15 minutes, or until the cookies are golden brown.
  • Cool for 5 minutes on the baking sheet before transferring to a wire rack.

 

  • Enjoy warm or store in an airtight container for up to 3 days.

Notes

  • Use frozen blueberries if fresh ones aren’t available, but do not thaw them before mixing.
  • You can substitute honey/maple syrup with a sugar-free alternative for a lower-carb version.

 

  • Add a handful of dark chocolate chips for extra indulgence.
